Gas and charcoal compared

The charcoal barbecue or grill is the very essence of traditional cooking: grilling over hot coals. The most obvious advantage is the characteristic flavour that wood or charcoal embers give the food. The gas barbecue or grill is distinguished more by its practicality. Just connect the device to an LPG tank and turn it on; the electric starter does the rest. The gas superheats the lava rock, cooking by means of refracted heat, or superheats a cast-iron or stainless-steel plate, cooking by contact. The main advantages of gas cooking, then, are simplicity and cleanliness. You're ready to cook in just five minutes, without having to clean out the ash typical of charcoal or wood barbecues.
