Grilled Smoked Herring

Ingredients for 4 people
4 smoked herrings
black peppercorns
olive oil
a little vinegar

Place half a cup of oil and a few spoonfuls of vinegar in a bowl, beat well to emulsify, add a few pinches of freshly ground pepper, and mix again. Place the herrings on a hot grill and sear them on both sides. Arrange them on a warm plate, season with the previously prepared sauce, and accompany them with hot polenta.
