Grilled Sea Bream


Preparation and cooking time
about 1 hour, plus 1 hour for marinating the fish

Ingredients for 4 people
4 sea bream totalling 1 kg
1 onion
1 bay leaf
a few sprigs of parsley
2 garlic cloves
thyme
olive oil
1 lemon
salt
pepper

Preparation
Clean and scale the fish carefully; wash and drain well. Meanwhile, trim, wash and chop the parsley, garlic and onion and place the mixture in a large soup plate; add the crumbled bay leaf and a pinch of thyme; mix the ingredients together. Arrange the fish on the plate in a single layer; drizzle over half a cup of oil and the lemon juice; turn them over to season well, and let them rest for about an hour or more, as desired. Drain the fish and wipe off the herbs, and place them on the hot grill plate. Cook over moderate heat so they cook internally without burning on the outside. Sprinkle occasionally with the leftover marinade. Use a spatula to turn them once they are cooked on one side. When done, or just before the cooking is finished, salt and pepper them. Serve piping hot.
